‘West Coast Kvass’ is a fresh expression of an age-old beverage that celebrates both health and flavor.


So what exactly is kvass? It’s a fermented refreshment that has been enjoyed by East Europeans for centuries, traditionally served from neighborhood street carts as an elixir for people on the go. The traditional version is super healthy… but not so delicious. We saw an opportunity. Using regional organic ingredients elevated by craft fermentation we created ‘West Coast Kvass’ as a fresh expression of an age-old beverage that is a celebration of both health and flavor.

We’ve reimagined kvass with fresh organic California-grown ingredients.

It’s craft fermented like kombucha, but BETTER. Here’s how it’s made..

Fresh ingredients arrive to our solar-powered fermentory in Petaluma, CA. We use 100% organic ingredients and 85% of them (by weight) are grown in California.

Sliced organic carrots and beets are submersed in filtered water. Their natural sugars, vitamins and minerals fuel fermentation. Fermentation is conducted by 7 well-studied species of probiotic bifidobacterium and lactobacillus bacteria.

Real pressed juices are added to impart lively flavors just before bottling.

Light carbonation is added with a brite tank (like beer and wine) and then the kvass is bottle raw, alive and unfiltered. 

All of the food waste from fermentation becomes animal feed on local farms practicing regenerative agriculture.

A diet rich in fermented foods has been shown to support healthy digestion, reduce inflammation, improve mood and increase gut microbiome diversity.
